Golden straw in colour, the nose has a floral citrus blossom lift along with fruit characters of lemon, lime, pear and apple with a hint of marzipan and vanillin oak. The juicy sweet palate is smooth, slippery and sleek with a texture of creamed honey and nuances of marmalade like bitterness finishing with a crisp clean mouth feel..
Winemaker's Notes
The combination of my aim to produce a dessert style wine with a point of difference and the fact that Margaret River generally does not experience the right weather conditions to make good botrytis style wines lead to the cane cut style. It is a wine that is not overly cloying and balanced with crisp clean acidity so that it can be enjoyed with dessert, even lighter styles e.g. panacotta with summer berries. Enjoy now and for the next 5 to 8 years.
Viticulture & Vinification
Made from the old Estate Riesling vines planted in 1973, the fruit bearing canes were cut when the flavours in the grapes were at their optimum. The grapes were then left out hanging on the vines to dehydrate for about 3 weeks, thus concentrating the sugar (18.5 Be), acid and flavour.
The hand picked grapes were partially whole bunch pressed to extract some of the juice, which was then put back into the tank press onto the skins to aid the re-hydration of the raisined grapes. This soaking process took about 24 hours before the grapes were slowly pressed. After settling, the juice was fermented in a stainless steel tank to approximately half the original sugar level. The wine was settled and put into 3 year old French oak barriques to mature until bottling in October 2008.
