The formula is hand-picked fruit from old, unirrigated vines which are hand pruned and canopy-managed for low yields and optimum flavour ripeness. Only the best fruit goes into the Estate wines and the process is overseen by the passionate vineyard and winemaking teams.

I have revisited this several times over the course of writing this year's Guide and have upped the ante to place this in the very top level of Margaret River Cabernet. This has a youthful allure about it and is just settling into stride on the nose. Smells of mocha-scented oak give way to leaves and cassis, fresh picked roasting herbs and some earthy nuances too. The Palate has lively, supple berry uptake amid rich, swirling tannins that straighten through the middle and pin the finish into long, even shape. Toasty oak adds swanky style. This is quite a wine, immaculately complete in every sense - Juniper Estate has truly arrived.

Another excellent cabernet from Margaret River’s ace ’07 vintage. Concentrated, vibrant blackberry fruit; oak is handled with subtlety. There’s a burst of liquorice on palate and the tannins are ample on the long finish. A wine of real structure. Now to 20 years.

This Cabernet is class through and through. The fresh cassis aromas and flavours are complemented by tobacco leaf and French oak overtones. The palate is ong, with very fine tannins.

Fruit concentration and power are evident from the first time you plonk your nose into this pure essence of cabernet fruit. A nice mix of fresh cut flowers with more substantial blackcurrant and black olive beneath the surface. The palate has power in abundance with the oak worked into the rich opulent fruit. 2007 Juniper Estate (Cabernet) is developing slowly. Forrestal admired the "ripe, sweet blackcurrant fruit, with a nice touch of cedar in neat balance. It's fresh, clean and lively." The wine combines good depth of blackcurrant and regional bay-leaf characters and shows considerable concentration, although I did find the tannins very dry. Give it a few years to soften and for complexity to build.
